You do not need to maintain eye contact throughout your videos. It took me a while to figure this out, but I'm glad I did.
It's a lot like having a conversation. Eye contact is good. But what you don't want is someone who locks in on you and never provides a break from that eye contact.
At first, it's uncomfortable. Eventually, it becomes creepy.
The same thing is true of talking head videos. You want to talk to your viewer and simulate eye contact. But you don't need to stay locked in the entire time.
I've found that when I do look away or think briefly, it makes the video more conversational, more natural, and more relaxed. But I'd also say that doing this makes me more natural and relaxed.
Otherwise, if I'm locked in (which I have been), I'm often more uptight. And that carries through to the tone.
